sweet potatoes

Hi! I am entering a sweet potato recipe contest, and part of the contest is sharing my recipe and what inspired me, with you.

The rundown: "an easy, everyday, original recipe that unleashes the amazing qualities of the sweet potato"--with out the sugar stuff!

Sweet Potato catfish hushpuppies
with bread and butter pickle tartar sauce -dill optional



Here goes! A couple of years ago I met a North Carolina boy who loves sweet potatoes the most out of anyone I'd ever known. It took no time rubbing off on me. Now its my favorite vegetable.
I fix them the same way everytime, my favorite way. Wrap in foil tight, bake at 425' for 30-45 min or until you can push your finger in and it mushes just right, and topped with butter. The last time I prepared them differently, I made 2 birthday pies, one with marshmallow meringue and one with an oreo cookie crust...

I am a prime example of the whole point of this contest: "celebrating the versatility of sweet potatoes"!

So what's a better way to celebrate, than with a basket of Sweet Potato catfish hushpuppies!

Here's the inspiration beind it: the sweet potato, distinctly North Carolina, represents not just the food tradtions we have here, but the experience that comes with them. No matter if its wrapped tight in foil or its marshmallow pies or casseroles, it serves as a crucial component when getting together with the people who mean the most to you.

And so will these hushpuppies! Summer's coming quick with good times to come, and where there are hushpuppies, there's friends gathered around them. It's a well suited fit for the NC sweet potato. It has the opportunity to be the centerpeice that it is, and keeps with the tradtion of good people coming together over sweet potatoes.


Sweet potato catfish hushpuppies
with bread and butter pickle tartar sauce -dill optional

Ingredients:
1 lb sweet potato, peeled and grated
      =2 cups packed
1/2 lb. catfish fillets (my friend-and roommate Alex does.not.eat.seafood
and he popped 3 in a row and had no clue, or cared that he ate fish!)
cajon seasoning
olive oil
1 1/2 cups hushpuppy mix
1/4 teaspoon cinnamon
2 lemons
salt and pepper
oil for frying

Method:
Preheat oven to 500 degrees. Peel sweet potato and grate on the medium grate on the box grater, be careful of your knuckles. Add to large bowl. Season fish with cajun seasoning, lightly or heavy-to your liking, and place on parchment paper lined pan. Slice 1 lemon into thin round slices and place over them over top of seasoned fish. Bake on top rack for 15 minutes.

When done, allow to cool down for 5 minutes, then add to sweet potatoes. With a fork mash fish and mix together well. Add juice of 1/2 lemon and mix in. Add cinnamon, a pinch of salt and a little heavier on the pepper.  Then add hushpuppy mix a little bit at a time, stirring well.  If needed, add other half of lemon and stir if seems to need a wetter consistency.  *add diced jalapeno peppers if you want them spicy!

Heat oil to 350'. Drop a Tablespoonful of mix into oil. It will bubble, fry for 3-5 minutes til deep golden brown. Fry hushpuppies in batches. Allow to drain on a paper towel and cool down a bit before eating.  Enjoy with tartar sauce or butter. Great next day!

Bread and butter pickle tartar sauce
Ingredients:
1/2 cup bread and butter pickle chips, chopped
1/2 lemon, juiced
1 1/2 teaspoon Grey Poupon mustard
1/2 cup Dukes mayo
1 cup greek plain yogurt
1 teaspoon chopped dill, optional

Method:
Mix together all ingredients well. Chill in fridge for 10 minutes, and serve alongside sweet potato catfish hushpuppies.

Dear sandwich lovers,

THANK YOU. Every Wednesday, I interuppted your day and handed over your pick of the week, wrapped in white butcher paper, with YOUR name on it.
A shout out is due to all my regulars!
And not just my weekly customers, but ALL of you, who ever satisified their taste for Porch ROCKIN' pimento cheese, The Bomb chicken salad, and that most delicious CB and J. You are special. You believed in me, let me feed you, and you are the foundation of Porch ROCKIN'. 

It's almost been 2 years since I served my first CB and J to you, starting with blueberry-blackberry jam. From the beginning I did not know what Porch ROCKIN' would become, but I knew I wanted to share my love for making and enjoying the simplest and yummiest of foods with you, right here in Raleigh, NC.

Now, I want to share Porch ROCKIN' with more people and I want you to be able to enjoy Porch ROCKIN' anytime you want. That's right! I am headed in a new direction which will put my jams and cashew butter into local stores and markets.  But I will not give up on finding a way for you to have your favorite Porch ROCKIN' sandwich made with that Yellow Dog bread.  Until then, I am going to work on making it possible for you to "spread the jam and share the love"!

Turkducken: the tripple threat

Let's talk turkey. Chicken and duck. All account on falling asleep to Paula's Southern Thanksgiving show on Hulu, I decided I was going to make a Turkducken. I have never made one before, but she does a good job of showing us how its done and she made me laugh. I'm just going to make one...(can you imagine two turkduckens, aye!) So it will be first come first serve.

I want to say I'm thankful that Thanksgiving comes just when I need it most.  Family, good food, and the time to do nothing else but enjoy the both. And this year I'm especially thankful for you, as you all are apart of the Porch ROCKIN' family.  This Wednesday, lets pre game Thanksgiving and share it together.

Are you sitting down?  There is a different chicken salad on the menu, it's just a guest star because I am such a sucker for Rotisserie chicken. The chicken is from one of my favorite places, Mami Noras. It's the bomb restaurant.  Easy, counter service, fun Peruvian drinks, and lick your fingers good chicken. I always get a leg and thigh with rice and coleslaw. Great rice. And don't worry, I will stock up on The Bomb in tub form at The Saturday Market.

Festival menu

 I will be making 600 sandwiches and setting up tent on Saturday from 10am-7pm. But to honor my word, I'd like to deliver just a taste of The Saturday Market menu.

I have 16 sandwiches, I would like to deliver between 11am-noon. If you are interested, please reply with your location and they will go to the first 16 to respond.

stay safe

And sit tight. Market is getting rained out. But here is something to look forward to. My neighbor at The Saturday Market, New Grass Gardens, is beginning his LATE SUMMER FARM BASKET.


Happens to be same day as our delivery, Wednesdays. A healthy veggie box, with a pickup location at NOFO in Five Points. ALMOND BUTTAH

First batch ever for Porch ROCKIN'! 

This week at the The Saturday Market, CB&J's will be made with almond butter, and Just Peach and Raspberry-Peach jam. Have it with banana or call it "The Works" with banana and BACON. Be one of the first to snag one. (see the rest of the MENU)


Also, you will have the choice of The BOMB chicken salad on Yellow Dog Bread Jalapeno cheddar or French. Yellow Dog makes these sandwiches better.

Peach me.

Is this for real? Peach Jam.

New flavors have been jammed and jarred. Porch ROCKIN' is happy to share with you "Just Peach" and "Raspberry Peach".



Everything important is on the MENU and we are lugging 5 gallons of fresh squeezed lemonade to cool you down. And I hear there is going to be a water mist sprayer to really help out with the heat. Come quick for those chicken salad tubs!
